
Smoked Salmon, leek and potato soup

Serve up this Finnish-inspired creamy smoked salmon, leek and potato soup for a delicious weeknight meal in 35 minutes. Leek, carrot and potatoes combined with hot smoked salmon, dill and cream.
Ingredients
1 leek, sliced
2 carrots, diced
500g potatoes, diced
6 cups chicken or vegetable stock
1 Tbsp dried dill
⅓ cup cream
180g hot smoked salmon, flaked
Method
Heat a large saucepan to medium-high heat. Add a drizzle of oil or a knob of butter and cook the leek and carrot for 8-10 minutes or until tender.
Add potatoes, stock and dill. Bring to the boil.
Once boiling, reduce to a simmer, cover and cook for 10-15 minutes or until the potatoes are tender.
Stir through cream and three quarters of the salmon, then cook for 5 minutes or until heated through. Season with salt and pepper to taste.
Divide the soup into bowls and top with the remaining salmon. Serve while hot.
Top tip: Garnish your bowls of soup with chopped chives or coriander for added flavour.
