Ingredients

  • 1 leek, sliced

  • 2 carrots, diced

  • 6 cups chicken or vegetable stock

  • 1 Tbsp dried dill

  • ⅓ cup cream

  2. Add potatoes, stock and dill. Bring to the boil.

  3. Once boiling, reduce to a simmer, cover and cook for 10-15 minutes or until the potatoes are tender.

  4. Stir through cream and three quarters of the salmon, then cook for 5 minutes or until heated through. Season with salt and pepper to taste.

  5. Divide the soup into bowls and top with the remaining salmon. Serve while hot.

Top tip: Garnish your bowls of soup with chopped chives or coriander for added flavour.
