Quick dumpling soup

Warm up with Kenny’s easy-to-follow dumpling soup recipe. Make it your own by adding pre-cooked proteins, tofu, or your favourite condiments.

Ingredients

  • 3 cups vegetable stock

  • 1 Tbsp soy sauce

  • 2 tsp sesame oil

  • 1 spring onion, thinly sliced, white and green parts separated

  • ½ tsp fish sauce, optional

  • 10 frozen dumplings

  • ½ cup baby spinach

Method

  1. Combine the vegetable stock, soy sauce, sesame oil, white parts of the spring onion and fish sauce, if using, in a medium pot.

  2. Bring up to a boil on medium-high heat. Once boiling, add the dumplings.

  3. Cover and allow the soup to come back to a boil. Boil for 8-10 minutes or until cooked through.

  4. Remove from the heat and stir in the green parts of the spring onion and spinach.

  5. Split the soup into 2 serving bowls. Enjoy!

Top tip: Customise your own and add in any pre-cooked proteins or tofu that you desire and top with your favourite condiments. Add your favourite fresh or frozen vegetables in with the dumplings.
