
Avocado hollandaise

A great way to use ripe avocados and make a tasty versatile condiment suitable for all kinds of different applications. It’s super easy to throw together this hollandaise with 5 ingredients, a blender and 10 minutes.
Ingredients
1 ripe avocado
2 egg yolks
2 Tbsp fresh lemon juice
¼ tsp paprika
120g butter, melted and hot
Method
Blitz avocado, egg yolks, lemon juice and paprika with a hand blender or in a blender until smooth.
Gradually add in the butter with the motor running until thick and creamy.
Season to taste with salt and pepper.
Serve.
